What you'll need
2 tbs of olive oil
4 medium zucchinis, chopped
2 cup carrots, halved length wise & chopped
2 cup fresh or frozen corn
2 cup fresh baby spinach
1 medium red onion, cut into thin wedges
4 garlic cloves, minced
Angel Hair Pasta (box to serve 8+)
1 cup chopped walnuts, toasted
1/2 cup shredded Parmesan cheese
ground pepper to taste
What you'll do
In large skillet, heat oil over med-high heat. Add zucchini, carrots, corn and onion, cook & stir 10-12 minutes or until carrots are tender. Stir in spinach and garlic, cook an addition 1 minute longer.
Meanwhile, prepare pasta according to package directions. Add to vegetable mixture, toss to combine. Sprinkle with toasted walnuts, cheese & pepper. Serves 8
