Low Carb Peanut Butter Cookies
What you'll need:
1 egg
3/4 cup of almond flour
1/2 cup sugar free peanut butter
1-2 tablespoons of sugar of your choice, I used Swerve's Brown Sugar
pinch of salt
These would be great with some sugar free dark chocolate chips in them I'd bet, or maybe even drizzle a little on top! I mean, go wild right?
What you'll do:
- Preheat your oven to 350 and line a cookie sheet with some parchment paper or a silicone mat.
- In a medium sized bowl, mix your dry ingredient together just to combine, then add in your egg and peanut butter and mix until all combined.
- Roll into as many balls as you want, I made mine small and got about 19.
- Press a fork into each cookie, to make the traditional marks (criss-cross) gently.
- Bake at 350 for 10-15 minutes.
- Let Cool!
- Enjoy!
These cookies are great with a little sea salt sprinkled on top and come in at a big fat 1.2 net carbs and only 72 calories. I don't find them terribly sweet, but that's okay-I am not a big fan of sweets anyway!
