Well, I am always looking for something the family can all enjoy, without the side glances and the questions..."is this keto?" to which I always reply "why yes darling, and it's just food"....because let's face it Keto is basically just eating meat and veggies on the daily! It's not about just eggs, cheese and bacon-though you can have those too.....
So last night, I decided to make some chicken breasts......easy right? Here is what I did.....
What you'll need:
6 chicken breasts (3 split) for quicker cooking
1 cup mozzarella cheese (grated)
1 jar of marinara of choice
Lawry's Garlic Season Salt (to taste)
2-3 tablespoons of butter
What you'll do:
Pre-heat oven to 375. In a 9x12 casserole dish-put in about 1/4 cup of the marinara, spread it around to coat the bottom.
Heat a skillet with a tablespoon of butter (while that heats up, sprinkle your chicken breasts with a little bit of Garlic Salt, put in chicken breasts in batches-cooking 2 at a time about 5-8 mins per side depending on thickness.
Put chicken into casserole dish as they finish in the skillet. When you get them all cooked, pour over the rest of the marinara. Top with cheese. Bake in the oven for about 15-20 mins. You could even cut this down if your chicken is pretty much cooked through from the pan frying, or increase if you prefer not to cook the chicken prior to baking it. If your chicken is more done, you could simply broil the dish to melt the cheese.
Note: for the photos, I cooked these in two different dishes this time-so I could add mushrooms to mine-my husband is not a fan and didn't want them to get "mixed" into the main dish! I am such a good wife, dang.
