Chocolate Chip Cookies

 Y'all-I cannot even with these cookies, the are so dang good!  I won't write to much because I just want to share......the recipe!  I even typed it up if you want to download it and print it.

What you'll need:

1 ½ cup fine almond flour
¾ cup erythritol
1 stick melted butter
1 egg
1 teaspoon vanilla
½ teaspoon baking powder
½ teaspoon xanthan gum
¼ teaspoon salt
1 cup chocolate chips of choice

What you'll do:

Beat melted butter with sugar until well combined, add in egg and vanilla and beat for 15 seconds.  Add in all the dry ingredients and beat again until well combined.  Fold in chocolate chips.  Scoop out onto lined cookie sheet.  Bake for 12-15 mins depending on oven.  Let cookies cool on cookie sheet until firmed up.  Store in airtight container.

Keto "Bread" Sticks

So hands down my favorite snack!  Keto Bread Sticks.  They are honestly the best thing I've had in a very long time.  They are salty, a little crunch-from the crust as it cooks in the skillet-and cheesy!  I could eat this for breakfast, lunch, dinner or snack!

I even made some the last time Xander's girlfriend was over, and when she came in from outside she asked "What is that smell!?" I said, "Cheese" she came to look and seemed intrigued so I offered her some and she said it was amazing, 10 out of 10!  That is a great compliment from a teenager :) and I do not disagree with her at all!  It's that good!

What you'll need:

1 package of La Chona Panela Cheese
Spray Oil
Marinara
Garlic Salt (I use Lawry's)

What you'll do:

Heat non-stick skillet medium heat.  Slice cheese about 1/4 inch thick, or as thick as you want.  Spray pan with some oil and lay slices of cheese into the skillet-sprinkle with some garlic salt and let brown, flip and brown some more-about 4-5 mins per side depending on how hot your skillet is.

Serve with marinara of choice if you want.

(little) Girls Weekend

 Finally getting around to blogging about our weekend with my darling nieces S&S.  I have to be honest, I was nervous about having three girls in the house-all excited, for more then 12 hours, under the age of 7.  Most nervous about having a very young gal at the house-without her mama.  But it all turned out wonderfully, and all three girls had a great time.  Miss O just adores her cousins, especially "the baby" as she so lovingly calls her.  Miss S2 didn't seem to mind, most of the time.  And when she did get tired of it, she let Miss O know....which was adorable.

The girls played all day, and then we had a little luncheon for Weston's 18th birthday.  The girls all eat good, they were starving by lunch time.  They also, ate all their icecream cake.  Later that evening, after they had supper and bathes we popped some pop corn and they watched TWO movies before one by one passing out.

The next day, their mama came and got them early-but we did have time for WAFFLES!  I of course used my little Dash Waffle maker <---you can get one here!  So cute.  I love that thing.

Anyway, I was able to snap just a few images of the two sisters together the day they came....are they not so beautiful?

Keto Kandy!

Sadly, I cannot give credit where credit is due because I have no idea who the original person that created this recipe is.  I saw it on Tiktok late at night one evening, and it was something a friend made the poster.  I couldn't find it when I was searching for it again-but lucky for me I did have my notebook on me and did jot down the ingredients so I could try it later.  So yesterday, I gave this "Keto Crack Candy" a shot....and it's GOOD, it's sweet!!!  It's really really sweet.  (click here to download the recipe)



What you'll need:

1/4 cup butter
1/4 cup brown sugar alt of your choice
1/4 cup powdered sugar alt of your choice
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/4 cup of chocolate chips (I used white chocolate and dark chocolate Bake Believe chips)

Melt your butter in a pan, after melted add in your sugars and stir and watch until boiling and getting thicker.  Add in nuts (you can use what you want I am only listing what I used because that is what I had on hand).  Stir around for a few mins.  Pour mixture into a parchment paper lined 9x9 pan and smear around.  Top with chips, put in the fridge for a few hours until cool and firm.  Break apart and enjoy!

Biscuits & Gravy Recipe (keto style)

 So one of my favorite breakfast foods of all time is biscuits and gravy.  I love it with or without sausage.  I just love it.  I love the flavor, the way it fills you up, and how easy it is to make.  I didn't think I'd have it ever again.  Well, one of the main reasons I bought SOUTHER KETO (click here) was because I saw it had a recipe for keto biscuits (1.5g net carbs) and sausage gravy (1.5 net carbs) recipes.  I was so excited to give it a try.  My husband, who is NOT keto, had double-so that will tell you how it tasted.

I am still getting used to the texture of almond flour, not being as powdery (kind of grainy), but with the gravy over it-you don't even notice honestly.

Drop Biscuits

1 1/2 cup finely ground blanched almond flour
2 teaspoons baking powder
1/4 teaspoons salt
1/4 cup sour cream
2 large eggs
2 tablespoons salted butter, melted but not hot

  1. Preheat oven to 400, grease your baking sheet with oil or use parchment paper (I used my silicone liner)
  2. In a medium-size bowl, whisk flour, baking powder, and salt together.
  3. In a small bowl, whisk eggs, sour cream, and butter together.
  4. Pour into the flour mixture, and mix well.
  5. Allow batter to sit for 5 mins
  6. Drop the batter by the large spoonfuls on a prepared baking sheet about 2 inches apart and bake for about 10-12 mins.
  7. Allow to cool a bit and enjoy!
One thing I noticed about this recipe is that when I did large spoonful's I only got six biscuits; maybe my spoons are giant, IDK-but just food for thought :) 

Sausage Gravy

1 pound bulk breakfast sausage
1 cup heavy whipping cream
3/4 cup water
1/2 teaspoon xanthan gum (not necessary but does add some thickness)
salt & pepper to taste

  1. In a large skillet over medium heat, brown sausage until done (get it nice and crumbly)
  2. Reduce heat to low and stir in cream, water, and xantham gum.
  3. Stir stir stir, until it gets thick.
  4. Add more water if it gets too thick.
  5. Add in salt and pepper as you like it (or whatever other spices you like)
  6. ENJOY OVER THOSE BISCUITS, GIRL!

Cajun Chicken Zoodles Recipe (so so good)

Cajun Chicken Zoodles

What you'll need:
4 chicken breasts (boneless/skinless cut into cubes)
4-5 small to medium zucchini (spiralized & steamed/drained of water)
1/2 cup of heavy whipping cream
2 tablespoons of butter
1 tablespoon of olive oil
1/2 cup parm cheese (grated)
2 gloves of garlic (crushed)
4-5 teaspoons of Tony's Seasoning (or any cajun style seasoning of your choice)
Salt/Pepper to taste

What you'll do:
  1. Mix chicken with cajun seasoning in a bowl until well coated.
  2. Heat large skillet (med-high heat).  Add in butter and olive oil.  Melt together.
  3. Add in chicken, brown until done (6-8 mins)
  4. After chicken is done cooking, add in garlic and mix for about 2 mins not letting garlic burn.
  5. Add in heavy cream, mix well.
  6. Toss in zoodles.
  7. Top with cheese.
  8. Remove from heat.
  9. Mix.
  10. Enjoy :)
When I first made this, I put the noodles in raw-but then the sauce got a little watery.  I didn't find that it took the flavor away, but I would have preferred it not to be so soupy.

Keto Waffles Recipe

 I've been doing keto for a little over a week.  Well, if I am being honest, the first week I did just as a trial-still had wine at the end of the day if I wanted it, but started officially last Thursday.  No more wine, which is something to cry about-or so I thought, so far it's not been so bad.

I have seen a lot of video recipes on tiktok for chaffles, and waffles and I've tried a few, I have tweeked this particular recipe to my own likes-and so far this is my favorite version.

I used the tiny waffle maker, that I purchased off Amazon for $9.99 (click here).  I liked it so much, I bought the Christmas one for my daughter who lives in Portland and it was only $15.99 I think.....she loves it and is now happily making waffles for my grandson Oscar.

I am not a professional cook, recipe developer or anything of that sort, this recipe may be tweaked how you see fit-add some peanut butter, coco powder, go crazy.  

What you'll need:

1/4 cup almond flour (I used a fine ground version)
1 egg
1/2 tsp vanilla
1/2 tsp baking powder
1/2 tsp monk fruit sweetener (you don't have to add this I just like it)
1/2 tsp xanthan gum
1 tsp heavy cream (or half and half/or water)
2 tsp of butter

What you'll do:

  1. Heat your waffle iron
  2. Mix all your ingredients together
  3. Put a tsp of butter on your waffle iron (spray the top with oil)
  4. Pour in 1/2 your mixture.
  5. Cook for 2-4 mins.
  6. Repeat.
  7. Enjoy :)
When I plug all these ingredients into my carb manager app, it says that two waffles (a serving) is 3 net carbs.  Score!

Happy August, from Miss O

Decided to hook up my ol'lens to my ol'camera and take her for a quick mini-mini session with Olivia, so quick that we didn't even take the time to change her into something super cute or even brush her hair (or clip her nails (I am now seeing that needed to be done).  But I just haven't taking photos in so long I wanted to really give it a shot....Olivia was totally into it for the few minutes we were outside (it's hot BTW).....

Beach Day

We don't really get out much these days, and you know why (COVID19) is keeping all of us home more.....but as Florida opens back up, so does my sense of adventure.  I decided on Monday to take the day off and drag my three littles still left in the nest and meet up with my sister Jessica at Crescent Beach for the day. I am sure glad we did, because we had the best time.  I am so lucky to have some amazing ladies in my life, particularly my family!

Just when I am feeling alone, there is my sister(s), showing me I am never alone.

I am so blessed.
